couscous

I first tasted couscous when I was on a work-come-vacation trip to Taiwan in a Morrocan restaurant called Tajin. And since then I was hooked on to it. Since starting my “diet”(if you can call that) I was on the hunt for some healthy alternatives for rice and I came across couscous in my local Mediterranean grocery store.

I was a little apprehensive about it since I never made couscous before, but I bought myself a small box of couscous just  to try it out. To my pleasant surprise its very very very simple to make couscous. It took hardly 10 mins for me to make this and seriously a little goes a long way.

According to the directions, I made a whole cup for the first time and I wasted half of it. It might look  like it wont be enough but trust me it will be because its so filling.

If you are making just for yourself then half a cup is more than enough. Add one cup of water and one tablespoon of butter to half cup of coucous. Boil it till the couscous absorbs all the water, then turn off the flame and let it sit covered for 5-8mins.  fluff it with a fork before serving.

Its also very versatile. You can literally have it with anything. You can add it to a salad, make it as a side dish or a main dish or even as a dessert. I had with some beans and potatoes that was sitting in my fridge and some tomato chutney. couscous
