One of the many things in my bucket list is to visit NYC, stand in the line for The Halal guys cart( ’cause apparently you always find one) and eat some of their famous chicken over rice sitting by the W 53rd street. Though i did get the opportunity to get a taste a of it back in LA but in my hubby’s words nothing compares to its original self.
Its literally just chicken over rice. Nothing fancy .But even though its a simple dish, the beauty lies in its simplicity.
So i tried to recreate it in my oh-so-humble kitchen. and I must say, though not completely similar, It turned out pretty amazing. So here I am sharing the recipe with you. Give it a try. You might just be surprised as to how simple it is.
Ingredients for the yogurt sauce:
1 cup yogurt
1/4th teaspoon of apple cider vinegar
1 tablespoon of lemon or lime juice
pinch of salt and pepper
Mix everything together and keep it refrigerated until its ready to use.
For the chicken:
Boneless chicken breast
1 teaspoon coriander powder
salt and pepper(according to taste)
1 teaspoon garlic paste
Marinade the chicken with the above ingredients and fry it in some oil till the chicken is cooked.Let it rest for 5 mins after frying and cut them into strips or pieces.
For the rice:
1 tablespoon coriander powder
1 teaspoon turmeric powder
2 cups basmati rice
In the same oil add a little turmeric powder,coriander powder and some salt. Add the rice and cook it with four cups of water.
Assemble everything and serve it with a simple salad of lettuce and cherry tomatoes.
